ÖZET:
İş
sağlığı ve güvenliği insan hayatını doğrudan etkileyen bir faktör olduğundan
hem ülkemizde hem de Dünya genelinde önemi giderek artmaktadır. Özellikle gıda
sektörünün alt dallarından biri olan süt ürünlerinin tüm Dünya' da olan
yaygınlığı, bu sektörün ne kadar önem arz ettiğini göstermektedir. Bu
çalışmanın amacı, süt ürünleri üretiminde karşılaşılabilecek riskleri,
tehlikeleri belirlemek, bunlara karşı alınabilecek önlemleri tespit etmek,
sektördeki diğer paydaşlara da yol göstermektir.
Çalışmanın
yapıldığı işletmede toplam 236 kişi çalışmaktadır. Çalışmada işyeri ve
işçilerin çalışma ortamı incelenmiş ve 5x5 L Tipi Risk Değerlendirme Karar
Matrisi metodu kullanılarak risk değerlendirmesi yapılmıştır. Elde edilen
sonuçlar doğrultusunda işletmedeki eksikler tespit edilmiş, gerekli çözüm
önerileri sunulmuştur. Çalışmada süt ürünleri üretim sektörünün tahmin
edilenden daha çok risk ve tehlike barındırdığı görülmüştür.
ABSTRACT:
As
occupational health and safety is a factor that affects human life directly,
its' importance is increasing both in our country and worldwide. The prevalence
of dairy products, especially one of the sub-branches of the food sector, shows
how important this sector is. The aim of this study is to determine the risks,
dangers that may be encountered in the production of dairy products, to
determine the measures that may be taken against them and to guide other stakeholders
in the sector.
A
total of 236 employees work in the company. In the study, the working
environment of the workplace and workers were monitored and a risk assessment
was made by using the 5x5 L Type Risk Assessment Decision Matrix method. In
line with the results obtained, the deficiencies in the enterprise were
determined and the necessary solutions were presented. In the study, it was
seen that the production sector of milk products contained more risk and danger
than expected.
